Dried Flowering Lemon Thyme

A happy accident from a very hot summer...

Our flowering lemon thyme wasn't originally destined for the jar. After the successive heatwaves in 2026, the plants flowered incredibly quickly — and then another spell of 35°C heat arrived and the delicate flowers started, so rather than waste them, we dried the whole flowering herb and discovered something rather special.

It's intensely fragrant, with a bright lemony flavour and delicate floral notes from the little flowers. And the flavour builds.

Take a pinch and the first taste is gentle and citrusy, before the thyme's aromatic oils really start to come through. It gets stronger as you taste it, leaving a wonderfully lingering lemon-thyme flavour.

We think it's particularly lovely as a tea, but it's also brilliant in baking, desserts, cocktails, dressings and savoury dishes.

The mix naturally contains tiny lemon thyme flowers in shades of pink and brown — a little reminder that this came from a real field, in a real summer, rather than a factory.
